This Cabernet Sauvignon is a blend of Yallingup and Wilyabrup fruit, from the northern end of the Margaret River appellation. The cooler 2019 vintage required this northern fruit to enhance the dark fruit characters in the wine. The harvested fruit underwent 3 day cold soak before cool fermentation, and regular pump overs. The wine was then matured for 18 months in a blend of new and used French Oak Barriques.
Deep dark red with brilliant garnet hues
A great example of a classic Margaret River Cabernet, displaying aromas of black cherry and cassis with a deep mocha influence from the oak.
Displaying a palate of fine, velvety tannins and dark chocolate oak notes. A long soft finish.
This wine is drinking beautifully now, otherwise will develop further with careful cellaring of up to eight years.
