Eagle Bay Winemaking
Wilyabrup Shiraz was very carefully selected with only three rows hand picked from a single vineyard in the Wilyabrup sub-region. The selected fruit went to an open top fermenter for a long, gentle maceration on skins and then underwent 9 months maturation in a combination of new (50%) and 1 year old French oak barriques.
A very limited production of only 100 cases.
Bright ruby red in colour, with a black/purple interior
Vibrant, perfumed nose of red cherry and blueberry, with hints of spice and white pepper. The new oak provides complexing notes of char, delicatessen meats and vanillin that will continue to develop with time
Fleshy sweet black and red fruits interwoven with pepper and a juicy bright freshness.
Enjoy now, or cellar for up to 20 years to promote increased complexity and secondary oak development.
