100% Sauvignon Blanc sourced from a single vineyard just South of Witchcliffe.
The grapes were harvested in the early hours of the morning for immediate processing to maintain the freshness and aromatics of the fruit. Made in traditional Bordeaux style, fermentation was carried out in new French oak barriques to give the wine a depth of flavour, texture and complexity. After 3 months of maturation on yeast lees the wine was stabilized, fined and filtered for bottling.
Bright, light straw
Inviting aromas of lemon brûlée and guava
This is a complex wine with bright lemon brûlée and guava aromatics leading to textural palate, finishing with a delicate mineral acidity. A lovely sophisticated wine.
Drink now, but further cellaring up to 4 years will develop greater complexity to this wine.
